About the Dish:
Moong Dal Halwa is a decadent Indian dessert known for its deep roasted aroma and rich, grainy texture. Slow-cooked with patience and pure ghee, it’s a festive favourite that brings warmth and indulgence to special occasions.
Ingredients
- 1 cup yellow moong dal
- 4–5 tbsp Nova Dairy Shudh Ghee
- ¾ cup sugar
- 1½ cups Nova Dairy Pasteurized Milk
- ¼ cup Nova Skimmed Milk Powder
- 4–5 crushed cardamom pods
- 8–10 chopped almonds and pistachios
- 1 tbsp raisins
- A few saffron strands
Method
Step 1:
Wash the moong dal thoroughly and soak it in water for 4 hours. Drain completely and grind into a coarse paste without adding excess water.
Step 2:
Heat Nova Dairy Shudh Ghee in a heavy-bottomed pan. Add the ground dal paste and roast on low to medium heat, stirring continuously to prevent sticking.
Step 3:
Roast patiently for 20–25 minutes until the mixture turns golden brown, crumbly, and releases a rich, nutty aroma. This step defines the flavour of the halwa.
Step 4:
Warm Nova Dairy Pasteurized Milk separately and dissolve sugar in it. Gradually add this mixture to the roasted dal while stirring continuously. Cook until thickened.
Step 5:
Add Nova Dairy Skimmed Milk Powder, cardamom, saffron, and half of the chopped nuts. Continue cooking until the halwa leaves the sides of the pan and develops a glossy finish. Garnish with remaining nuts and serve warm.
